Cauca is a region in central-western Colombia, stretching from the Western Cordillera mountain range to the Pacific Ocean. Ocean winds and elevation result in Cauca being one of the coolest regions of the country. Geographically, the region has many features including the Popayan Plateau, many rivers, and the central volcanic mountain range.

In coffee farming, cooler climates and higher elevations allow the coffee cherry to ripen slower which results in more developed fruit flavour and an overall sweeter cup. 

In this cup you will taste dark chocolate with mellow raisin notes, cacao, and cooked tropical fruit flavours. Mild tangy tartaric acidity and sugary sweetness.

 

Origin: El Tambo, Cauca

Altitude: 1400-2000 MASL

Varietal: Castillo, Caturra, Colombia
