Orange marmalade, honey, toffee, dark chocolate
The Planadas municipality is located in Tolima, Colombia, a region which was heavily affected by the internal war the country suffered for more than 50 years. Most of the population here are ex-combatants from armed groups such as ELN and FARC, which after the peace agreement, many of them started working with coffee and became members of different associations to learn about coffee processing and get a better price for their crops. ASOPEP and ASCISP are two of the best examples of such associations who support producers with education and ensure they are paid fair prices. In the last 7 years, members from these co-ops have always been on the podium of Cup of Excellence in the country, a testament to their hard work and continuous effort to produce excellent coffees.
Like most producers in Colombia, farmers have small lots ranging from half a hectare to 2-3 hectares per family, which allows them to better control each step of the process. Their cherries are sorted, floated and sun dried – which takes a longer time but ensures better quality in comparison to other bigger operations. Tolima's weather conditions make it an ideal area to grow high-quality coffee. Almost all of the coffee grown in this region is grown in low temperature microclimates which produces a higher sugar concentration during the ripening process, resulting in a sweeter and more complex cup profile.

It has a delicate sweetness of golden honey lending to a harmonious balance and enhancing the coffee's complexity.
