Gedeb, in Ethiopia’s Gedeo sub-region, produces exceptional coffees predominantly of heirloom varietals. Most smallholder farmers in the area cultivate on less than 5 hectares, using traditional, organic methods in 'integrated coffee gardens' meaning the coffee plants are intercropped with other food crops.

Ripe cherries are delivered to wet mills, graded, and dried on raised African beds. They are shaded midday and turned frequently for even drying, reaching 11.5% moisture in 12–17 days, depending on weather conditions.
