Boysenberry, blackcurrant jam, lactic acidity, caramel, toffee
For over 150 years Sonia's family, originally of German descent, have farmed coffee in the Illamantapec region of El Salvador. Sonia and her family are committed to using only organic practices, as she believes this keeps the coffee flavours pure, and honours her family's farming tradition.
Through these practices, coffee produced here was the winner of the Cup of Excellence in 2003. This is now the fourth season that the farm has experimented with natural processing and, having purchsed lots from Sonia year on year since 2018, we are seeing Sonia's methods continue to yield phenomenal results.
This years crop presents heavy notes of boysenberry and blackcurrant jam with a hint of lactic acidity and a sweet caramel and toffee finish.
