Nitro-Fermentation - Watermelon Infusion

This funky flavour-bomb is produced by Julio Madrid and his team at Finca La Riviera who are known for their exotic heirloom varietals and cutting edge fermentation techniques.

This particular microlot has undergone a nitrogen maceration and anaerobic fermentation where ripe cherries are fermented for 36 hours in the cherry, then pulped, sealed with starter cultures and injected with nitrogen where they ferment again before being washed and dried over an extended period.

This intensive nitrogen fermentation brings fruit salad flavours of watermelon, honeydew, apricot, guava, kiwi, and oolong tea.

Altitude: 1700 - 1750 MASL

Varietal: Caturra

Process: Nitro-Fermentation (Watermelon infusion)
