Cherry Blossom is our spring blend, a complex, vibrantly fruity, cherry-forward cup built around a Colombian co-ferment. Producers across Tolima, Huila and Caldas process cherries at El Vergel Estate through a 48-hour anaerobic pre-ferment, then five days of fermentation with yeasts, red cherry flavours and sugarcane. Equal parts washed process Bugisu from Uganda, natural process from Brazil's Minas Gerais and São Paulo, and a natural ethiopian heirloom from Ethiopia's Oromia region complete the blend.

 

The result is a vibrant, fruit forward cup with notes of cherry blossom, red cherry, black forest cake, a creamy body and rich caramel.
