Ripe cherries are delivered to the Gizat washing station, where they are sorted and fermented for up to 72 hours, before being washed and dried on raised beds which encourage proper air circulation and temperature control. The result is a single origin full of fragrance and flavour, with notes of peach, bergamot, black tea and floral jasmine.
